The Hotel received several accolades for both the hotel and restaurants including a five star rating by The Scottish Tourist Board, membership of the highly recognized "Scottish Beef Club" and awarded the prestigious title as being one of Scotland's Hotels of Distinction, offering a very high standard in both food and accommodation.
The Collearn House Hotel was renowned in Scotland and throughout the World for its warmth of welcome, luxury accommodation, and friendly attentive service and excellently presented exciting innovative fresh food.
Steve emigrated to Canada with his wife Sue and two children Emma Jayne and Philip in 2000, when he began his career with Whistler Blackcomb. During the past 6 years he has worked as Chef in the Commissary Kitchen, Chef of Christine's 120 Seat restaurant on Blackcomb Mountain and since 2004 has been Chef of Catering and Special Events.
Steve's philosophy has never changed in his 23 years as a Chef:
"Cuisine is only about making foods taste the way the are supposed to taste - on a never ending journey of striving for excellence in using fresh quality ingredients treated with respect and cooked with care."
